Hi everyone ... newbe here.

We are bidding a very large project involving greasy floors in a meat packing plant.

Can anyone offer advise on this?

What chemical, strength, anything you can tell me.

Robert,

You will need a power washer for this application. Terra Wash is an excellent biodegradable degreaser. Are the floors wood or concrete? You will need to come back and apply a biocide afterwards. Give us some more details.
